Our team of judges at UK Young Restaurant Team of the Year 2025 is chaired by Vicky Endersen, director of MSK Ingredients.
VICKY ENDERSEN
Vicky worked at the Michelin-starred Roscoff restaurant in Belfast, before joining John Burton Race on the team that won 2 stars at L’Ortolan and again at The Landmark.
She returned to L’Ortolan as Head Pastry Chef under Alan Murchison and then Restaurant Tom Aikens before joining MSK in 2006. This was an exciting time with a surge in interest in ‘Molecular’ cuisine, and Vicky was instrumental in MSK taking a lead in the use of these modern ingredients.
If Willy Wonka had employed a development chef John would definitely have secured the job!
From his classical training worldwide in restaurants, luxury hotels and even cruise liners he’s now turned to innovation and development. John travels the world on his “food safaris” seeking inspiration and exploring new food trends.

JOCKY PETRIE
James “Jocky” Petrie is a Scottish professional chef, best known for his work alongside chef Heston Blumenthal as Head of Creative Development of the Experimental Kitchen at The Fat Duck, and as Group Executive Development Chef for Gordon Ramsay.
He has regularly appeared as mentor and judge on a number of television shows including MasterChef, Heston’s Fantastical Food, In Search of Perfection, and Top Chef Suomi.
